Chickpea Mushroom Burgers

These are reminiscent of falafel.
List of Ingredients
3 tsp. vegetable oil
1 small onion, finely chopped
2 cloves garlic, minced
1 cup chopped mushrooms (about 4 oz.)
1 10-oz. can chickpeas, rinsed and drained
2 slices bread, moistened with water and squeezed dry
1 tsp. ground cumin
1/2 tsp. ground coriander
1/4 tsp. salt
1/4 tsp. freshly ground pepper
4 pitas or crusty rolls (preferably whole grain)Recipe
In a large non-stick skillet, heat 1 tsp. of the oil over medium-high heat.
Add onion and garlic; sauté until onion is softened, 3 to 4 minutes. Add
mushrooms and continue to cook until moisture evaporates, another 2 to 3
minutes. Transfer mixture to a food processor. Wipe skillet to remove any of
the vegetable mixture. To the mushroom mixture, add chickpeas, cumin,
coriander, salt and pepper; process until finely chopped. Shape gently into
4 patties. Add remaining 2 teaspoons oil to skillet and heat over medium
heat. Add patties and cook for 4 to 5 minutes or until bottom is golden
brown. Turn patties and cook another 4 to 5 minutes or until golden brown.
Serve in pitas or rolls, topped with tomato, lettuce and spiced tahini
dressing.
Yield: 4 burgers
