    Great with khichdi or plain chapatis. You can use a light vegetable stock instead of water to give it a more "authentic" veg flavour.

    List of Ingredients




    2 cups soy granules (TVP or textured vegetable protein), soaked in water (just enough to cover to cover granules) for 10 minutes
    1 large onion, chopped fine
    1 green chilli, slit
    6 cloves garlic, chopped fine
    1 half inch piece of ginger, grated
    2/3 tsp. turmeric
    1 tsp. ground cumin
    1/2 tsp. red chilli powder
    2 bay leaves
    1 large tomato, or 5 tbs. tomato puree
    2 medium sized potatoes, chopped into small cubes
    1/2 cup peas
    1/3 cup chopped fresh coriander leaves
    1 tbsp. vinegar
    1.5 cup clear vegetable stock (optional) or use water
    4 tbsp. vegetable oil
    salt to taste

    pound using mortar & pestle:
    seeds of 5 cardamom pods
    4 cloves
    8 black peppercorns
    1 one-inch piece of cinnamon
    a pinch of nutmeg

    Recipe



    Heat oil in a pan. Add onions, and slit green chilli. Add ginger & garlic, and fry till onions are golden brown. Add turmeric, cumin, bay leaves and pounded spices. Stir quickly for less than a minute. Add tomatoes, (or puree) and mix well. Squeeze excess water from soy granules. Add to pan, and mix well with spices, add salt. Add chopped potatoes, cover and cook until potatoes are done. Add peas, and chopped coriander. Add vinegar to taste. Cook for a further 5 minutes
