WALNUT CUTLETS

List of Ingredients
1 cup rolled oats 2 tbspn walnuts, chopped
1/3 cup onions, finely diced 1/2 tspn mixed herbs
1/2 tspn salt 1 egg (replaced with 1/8 cup gluten flour)
1/3 cup milk (I used soy milk)
1/4 cup parsley, chopped
1/4 cup celery, chopped fine
1 tbspn tomato sauce (I didn't use this)
2 tspn peanut butter (I used 2 Tbspn)
2 tbspn hot waterRecipe
Mix peanut butter with hot water. Add all ingredients and mix. Allow to stand. Form into patties and shallow fry. Place patties in casserole dish. Dilute tomato soup with an equal volume of water and pour over patties. Place in oven and back at 180 degrees C for half an hour. Serves 6.
This recipe makes about 12 small patties - 2 to a serve. I deleting the tomato sauce, I increased the amount of hot water until the patties were about the right consistency to fry them. They are very tasty and filling, but as I said, fragile.
