TORTILLA SOUP

Saute in a large pot/dutch oven:
4 6-in corn tortillas
1 large onion, chopped
4-6 garlic cloves, minced
1/4 c fresh cilantro
Add:
2 cups cooked chicken, cubed
2 qts chicken broth
1 14.5-oz can of diced,stewed tomatoes + juice **
1 10-oz can of diced tomatoes with green chiles **
1 tbsp ground cumin
1 bay leaf
1/2 tsp ground black pepperRecipe
[**fresh can be used, and is preferred here]
Bring to a boil, reduce heat, & let simmer for 30 minutes
salt to taste
*Slice 8 corn tortillas into 1/4 to 1/2-inch strips
*While soup is boiling, in a saute pan, fry up the strips until crisp.
*Drain on paper towels.
*Serve soup, after removing bay leaf, topped with tortilla strips and shredded mozzarella cheese sub.
