Pressure Cooker Apple Sauce

Pressure Cooking For Everyone
Recipe Introduction
All you do is bring the apples to high pressure and turn it off immediately. You can use any apple you like (just not Red Delicious, which are best for eating and make a mealy sauce), but the recipe is probably best with a combination. For example, sweet Golden Delicious apples match well with tart Pippins or Empires. Or try juicy Jonathan apples with sweet MacIntosh. The final flavor varies according to the apples used, so be flexible - you may have to simmer the sauce a few minutes to reduce excess liquid and intensify the apple flavor.
