    Adapted from a recipe sent by Tiffany to GFCFRecipes list

    List of Ingredients

    2 cups pitted dates
    1/2 cup unsweetened cocoa
    1/2 cup nut meal (plus extra to roll)
    liquid sweetener of choice (optional to taste)

    Recipe

    In a Cuinsinart-type food processor, blend the dates, cocoa, and nut meal until combined. It will be VERY thick, and will be difficult to get the food processor to get it there. It should practically ball up. Add sweetener or water if it won't possibly combine, add additional cocoa or nut meal if too thin. Taking 2 tablespoons at a time, roll into a ball, and coat with extra nut meal. Flatten into a disk or leave as a ball. Store in the fridge in an airtight container.
