In a 1 quart saucepan, bring to a boil:
2 cups water
1 cup quinoa, rinsed
1/4 cup plus 1/8 cup pure maple syrup
1/4 cup unsweetened coconut, shredded
1 tsp. cinnamon
1/2 cup almonds, coarsely choppedRecipe
Simmer covered on low for 20 minutes. Quinoa will be transparent. Add 1/2 to 3/4 cup nut milk or soy beverage.
