Recipe Introduction
I used to date an Armenian from Kuwait whose mother grew up in Bourj Hamoud, Lebanon. He used to tell me my hummus was almost as good as his mom's. I use:
List of Ingredients
1 can drained garbanzo beans/chick peas (reserve liquid)
crushed garlic to taste
1/2 c. fresh lemon juice
1/2 c. tahini
1 tsp. ground cumin
1 tsp. salt or to taste
paprika to taste
olive oil as desired

Blend first 6 ingredients in food processor until smooth, adding enough reserved bean liquid to even out the consistency. This should look like a spread, not like wet crumbs. Also be alert not to make the spread too thin.
Transfer dip to bowl/container, sprinkle with paprika and drizzle with olive oil. Tear pieces of pita and scoop up some hummus. Enjoy!
PS: You can, of course, use dried chick peas. Be sure to cook them first, reserving the liquid as suggested above.
