    Basil and "Cheese" Scones

    List of Ingredients




    2 cups all-purpose flour
    1/4 cup shredded or grated vegan Parmesan cheese
    2 teaspoons baking powder
    1/2 teaspoon baking soda
    2 tablespoons chopped fresh basil or 3 tsp. dried
    1/4 teaspoon ground black pepper
    2/3 cup soy/rice milk mixed with 1 tsp vinegar or lemon juice
    3 tablespoons oil
    Choice of Egg Replacement = to 1 egg

    Recipe



    Combine the flour, cheese, baking powder, baking soda,
    basil and pepper in a medium bowl. Add the milk and oil. Mix until dry ingredients are JUST moistened.

    Divide the dough into 2 balls. Knead gently 3-4 times on floured surface. Pat the dough into 2 circles 7-8 inches in diameter. With a sharp knife score each into 6 wedges but do not cut all the way through.

    Bake in preheated 400 F. oven, 10-12 minutes until golden brown.
