LUCKY IRISH BOXTY PANCAKES

List of Ingredients
1/2 pound hot cooked potatoes
1/2 pound grated raw potatoes
2 c. unbleached flour
1 tsp. baking soda
1 and 1/2 c. buttermilk or soy or nut milk
curdled with a bit of lemon juice
oil or margarine for frying
salt and freshly-ground black pepper
Recipe
Drain, peel and mash the hot potatoes. Stir in the raw potatoes, flour and baking soda. Add salt and pepper to taste. Mix well with enough ³buttermilk² to make a stiff
batter. Shape into 3 inch patties about 1/4 inch thick. Fry on hot greased griddle, heavy skillet or electric frypan until crispy and golden on both sides. Makes 12
Serve warm with a sprinkling of sugar

Notes: These potato pancakes are a wel- known Halloween dish in Ireland. a silver coin, wrapped in cooking parchment, and hidden in the pancake means good luck for the finder in the coming year.
