Fettucini with Mushrooms

The other day I made fetticini with one of those huge Portabello mushrooms. I was going to grill the mushroom...but, since I'm not eating bread....I decided to share it with my family instead.
What I did. I washed and chopped the mushroom up into small bite sized pieces. I put it in the frying pan with a little oil....then I made a gravy with cashews and thickened it and cooked it over the mushrooms. The flavoring for the gravy
was with McKay's beefy seasoning....and Bragg's aminoes. I also added in a couple dollops of toffuti sour cream. I poured this over the noodles and put some steamed brocolli over the top. The kids even took it to school in their lunch the next day and ate it cold. (amazing that schools won't let them nuke their food!)
If I did it again I might add poppy seeds.....Recipe
