Mee Goreng is a moist noodle dish that's not too dry and not too soupy. This spicy dish comes from St Kilda's China Blue
Restaurant in Melbourne.
Serves 4.
List of Ingredients
Mee Goreng Sauce:
4 Tbsp diced onion
1 Tbsp diced garlic
1 Tbsp lemon grass
1 tsp galangal
1 tsp dry chilli
1 tsp paprika
Stir Fry:
450g fresh noodles (hokkien)
2 Tbsp vegetable oil
1 onion sliced
Half cup bean shoots
2 boiled potato diced
1 tomato cubed
1 Tbsp tomato sauce
Handful of beancurd and spring onions
Pinch salt and sugar
Garnish fresh lettuce and lemon wedge
Recipe
Make Mee Goreng sauce by adding all ingredients to the wok and simmer for 10 mins. Pour boiling water over noodles - drain and rinse. Heat wok, add oil and warm. Add onion and fry until soft. Add noodles and cook for two mins. Add potatoes, bean curd and cook over high heat stirring until mixed. To that add the Mee Goreng Sauce, tomato sauce, add salt and sugar and stir through. Add the tomatoes, spring onions and bean shoots and toss well. Serve topped with shredded lettuce and lemon.
