Noodles:
You may use manicotti noodles, or large shell macaroni
There is no need to precook...just add extra water and bake longer....lots easier than working with precooked noodles.
Ricotta-Like Filling
3 pkg Morinu Tofu
2 T. fresh lemon juice
2 T. egg replacer
1 t salt
1/2 t garlic granules
1 T. onion granules
1 T. basil (dried)
2 T. parsley (dried)
1/2 container Tofutti Better Than Sour CreamRecipe
Put small layer of Spaghetti Sauce ( I used commercial type)
on bottom of pan. Fill noodle with a knife..then lay it on top of the sauce. Proceed until pan is full. Give the noodles a little extra room so they can expand. Cover the noodles with more sauce and then add about three cups extra water. The water will absorb into the noodles. Make sure pan is covered with foil or a lid. Bake about an hour and twenty minutes at 350° You may top with a commercial 'jack' cheese. I did this the last time...and don't really like the 'oily' texture. I think I'll just top with more of the tofu mixture next time.
Also, if you are wishing to make this recipe more healthy, omit the Tofutti. It has partially hydrogenated oils.
