    List of Ingredients




    1 lb firm or extra firm tofu, fresh or frozen(thawed), chunked (or 1 lb any kind of "vegeburger")
    1 onion chopped
    1 pepper chopped optional
    3-6 cloves garlic chopped
    1-2 stalks celery optional
    1 can tomatoes any style (use a large 28 oz or small 14.5 oz-depending on how many people you want to feed)
    1 or 2 pounds fun shaped noodles (we like 'mixed colored' ones)
    1 Tbls parsley
    1 tea sweet basil seasonings: for italian;
    1tsp oregano and/or pizza seasoning may also add mushrooms or olives,
    for mexican; 1 tea cumin and/or taco seasoning may also add hot peppers

    Lightly cook vegetables in a little water until clear, then add tofu and seasonings.When all stirred together well, add tomatoes and stir. Then put water in tomato can (full) and add. Use enough water to almost fill the pot. Bring to boil. When boiling add noodles.Cook until noodles are done (if you need more water, you may add it, some noodles take more water then others). If you choose you can put it in a crockpot and cook oit that way. Note: this recipe can be done many ways. I've used eggplant for and with the tofu. You can add peas or other vegetables and you can use any kind of seasonings for different flavors. I've also added pineapple and canned beans. And I've used spaghetti sauce for the tomatoes.

    Serve with: salad and or french bread and avegetable or relish tray.
