    Whole-Wheat Fusilli with Raw Tomato and Jalapeño Sauce

    List of Ingredients




    2 pounds ripe tomatoes, halved, seeded, and cut into 1/2-inch dice
    2 to 4 medium jalapeño chiles, stemmed, seeded, and minced
    2 tablespoons extra-virgin olive oil
    1 small garlic clove, minced
    2 tablespoons drained capers
    1/4 cup chopped fresh parsley leaves
    Salt
    12 ounces whole-wheat fusilli

    Recipe



    1. Bring 4 quarts water to a boil in large pot.

    2. Combine tomatoes, chiles, oil, garlic, capers,
    parsley, and salt to taste (use sparingly) in bowl
    large enough to hold cooked pasta.

    3. Add salt to taste and pasta to boiling water and
    cook until al dente. Drain pasta and toss with tomato
    sauce until well coated. Serve immediately or cool and
    serve at room temperature.
