    Carrot Pie

    List of Ingredients

    1 cup dates
    2 1/2 Tbsp. cornstarch
    3/4 tsp. salt
    3 Tbspl soy flour (or fava bean flour)
    1 tsp. vanilla
    3 Tbsp. oil
    1 3/4 cup cooked carrots (may substitute pumpkin or squash)
    1 1/2 cups soy milk (or alternative almond or rice milk)

    Recipe

    Whiz all ingredients in blender. Pour into pie plate that has been lined with crust. Bake at 350 degrees F. until set, about 35 minutes. Top with a non-dairy whipped topping of choice.
