Carob Mint Tofu Pudding

Note: I used this pudding for my dd preschool's class for "finger paining on the table" and licking their fingers. The teacher even had a taste and loved it.
List of Ingredients
1 lb soft tofu (or regular if soft is unavailable)
1 to 1-1/2 cups maple syrup
1/2 to 2/3 cup carob powder
2 to 3 Tbsp arrowroot powder
3 tsp real vanilla flavoring
8 to 14 drops peppermint extract, or more to taste
Several dashes sea saltRecipe
Combine all ingredients in a food processor or homogenizing juicer. (this mixture is too thick for a blender.) Spoon into individual pudding cups and chill throughly until set: about 15 minutes in the freezer or 1 hour in the frig. A rich dessert. Most people think the carob in this puddding tastes exactly like chocolate.
