3 ozs plain flour
good teaspoonful ground cinnamon
level teaspoonful ground ginger
1/4 teaspoon grated nutmeg
level teaspoon bicarbonate of soda
3 ozs fresh white breadcrumbs
3 ozs shredded vegetarian suet
2 ozs brown sugar
2 ozs sultanas
2 ozs currants
tablespoonful of syrup
3/4 cupful of soy milk mix with a TBSP lemon juice
Recipe
Put all dry ingredients including fruit into bowl, mix together, add syrup and soy milk and mix to a soft consistency.
Turn into a greased pudding bowl and cover securely with either greased proof paper tied round top. Steam in large pot for 2 - 2 1/2 hours 3/4 filled with water. Don't let water boil away, keep topping up with boiled water. Serve with
soy cream or custard.
