360ml/12fl.oz. Water
150g/5oz Couscous
75g/3oz Dried Fruit (e.g. raisins, sultanas, dates)
360ml/12fl.oz. Soymilk
60ml/2fl.oz. Maple Syrup
1/4 teaspoon cinnamon
2 tbsp Cornflour
Recipe
Place the water in a small saucepan, bring to the boil then add the couscous and dried fruit. Mix well then cover and remove from heat.
Set aside for 5 minutes.
Meanwhile, in a separate medium saucepan, heat the remaining
ingredients over a medium heat, whisking constantly, until the
mixture starts to thicken Remove from the heat and add the couscous mixture. Mix well then pour into a serving dish and chill for at least 1 hour before serving.
