    Creamy Quinoa Pudding

    List of Ingredients

    1 cup quinoa, rinsed
    2 1/2 cup soymilk
    1/8 tsp. sea salt
    2 Tbsp. malt barley syrup, maple syrup, or agave syrup**

    2 tbp. kidzu, dissolved in. . .
    2 tb cold water

    1 tb vanilla
    1/2 ts fresh grated nutmeg
    -OR- ground cinnamon

    Recipe

    Put Quinoa, soymilk and salt in a saucepan and bring to a boil. Cover and simmer for 20 minutes. Add sweetener. Mix well.

    Add Kudzu, stirring constantly until mixture thickens. Add vanilla and spices.

    Top with your choice of topping or fruit. Delicious warm or chilled.

    Serves: 4

    **If gluten-free, do not use malt barley syrup
