    Lemon and Fruit Pudding

    * 4 - 12 oz. pkg of soft silken tofu
    * 1 1/2 cups dry sweetner (super fine sugar, turbinado, or other)
    * 1/2 - 3/4 cup fresh lemon juice, and grated lemon peel of two
    lemons
    * 1 teaspoon vanilla
    * 1/2 teaspoon salt
    * Fruit of your choice... I use ripe mango, and rasberries, but it works well with peaches, bananas, bluberries, sweet cherries, strawberries or any combination of these.

    In a blender, food processor, a mixer, or by hand whisk, mix the first 5 ingredients till very smooth. You may have to do small batches at a time in a blender...

    Pour 1/3 of the smooth mixture into a bowl, and then layer small pieces of fruit, continue layering pudding and fruit ending with pudding.

    Place bowl in fridgge or freezer to fairly firm, several hours or overnight.Top with a pretty arrangement of the fruit. Serve chilled.
