    List of Ingredients




    3 cups cooked millet (3/4 cup millet cooked in 3 1/2 cups water)
    1 1/2 cups pineapple juice
    1 Tbsp. lemon juice
    1/4 tsp. lemon extract (optional)
    1 tsp. salt
    1/2 cup cashews
    1/2 cup honey (or alternative liquid sweetener)
    1 1/2 cups Grape Nuts cereal
    3 to 4 cups fresh or frozen fruit (raspberries, strawberries, bananas,
    peaches, blueberries or other fruit of choice)
    2 cups fruit sweetened granola

    Recipe



    Blend hot millet with juices, cashews, honey and flavorings in blender until very smooth. It may take about 2 minutes (and you may have to blend half at a time, depending upon the size and strength of your blender). Place a layer of Grape Nuts cereal in the bottom of a 9 x 13 inch glass dish. Gently pour half the pudding over the cereal, then add a layer of berries or other fruit of choice, the rest of the pudding, and finally end with a layer of granola on the top. Chill 3 - 4 hours before serving to let it firm up.

    (Left over, cold millet does not work well for this as the pudding won't firm up very well if the millet is already cool.)

    ***Note: drizzle the top with fruit sweetened jam for a pretty garnish.
