Orange Couscous Pudding with Basil Syrup

List of Ingredients
30g/1oz vegan margarine, to grease
2 oranges, peeled and sliced
2 tbsp maple syrup
110g/4oz self-raising flour
110g/4oz caster sugar
55g/2oz couscous
2 liquid egg replacers
85ml/3fl oz olive oil
1 orange, zest only
1 tsp baking powder
For the basil syrup
85g/3oz caster sugar
small handful fresh basil leaves, finely choppedRecipe
Grease a large dish with the vegan margarine.
Layer the orange slices on the bottom of the dish and drizzle with the syrup.
Place the flour, sugar and couscous into a food processor and blend until fine.
Add the egg replacers, olive oil, orange zest and baking
powder and blend again until combined.
Pour the mixture over the oranges in the dish and cover with
cling film. Microwave on high for four minutes.
Meanwhile, make the basil syrup. Place the sugar in a heavy-
based pan and heat gently until dissolved and a caramel has formed.
Add the basil to the pan and shake to coat.
Remove the cake from the microwave and turn out onto a
serving plate. Pour the basil syrup over and serve.
