    Baked Brown Rice with Almonds and Vegeta

    List of Ingredients




    2 1/2 cups brown rice, washed and dry roasted
    1/2 cup almonds, washed, blanched, and skins removed
    1/4 cup onions, diced
    1/4 cup celery, diced
    1/4 cup mushrooms diced
    6 cups boiling water
    pinch of salt
    2 Tbsp. parsley, minced

    Recipe



    Mix the rice, almonds, onions, celery, and mushrooms together and place in a baking dish. Add the salt and water and stir. Cover the baking dish with a tight fitting lid or foil. Preheat the oven to 350 degrees F. Place in the oven and bake for 1 hour. Remove from the oven and uncover. Mix in the minced parsley and place in a serving dish.
