    2 cups long-grain rice
    1 Tablespoon vegan margarine (Earth Balance)
    1 (13 to 14 ounce) can unsweetened coconut milk
    1 cup water
    1 (3-inch) cinnamon stick
    1/4 teaspoon salt

    Recipe



    Rinse rice in a sieve under cold running water 2 to 3 minutes, then
    drain well. Meltmargarine in a 2 to 3 quart saucepan over moderately
    high heat. Add rice and cook, stirring constantly, until it becomes
    opaque, about 3 minutes.

    Stir in coconut milk, water, cinnamon, and salt and bring to a boil.
    Reduce heat to low and simmer, covered, 20 minutes, then remove from
    heat and let stand, covered, 5 minutes. Discard cinnamon stick and
    fluff rice with a fork.
