List of Ingredients
1/2 cup fresh lemon juice
2 teaspoons garlic, finely chopped
3/4 cup mayonnaise
1/4 cup olive oil
2 pounds 4 ounces (1-1/2 quarts) red new potatoes, diced and cooked
5 ounces (1 cup) celery, diced
4 ounces (1 cup) sweet onion, chopped
4 (2 pounds) avocados, diced
1/2 cup cilantro, chopped
Cilantro springs or celery leaves for garnishRecipe
To make dressing, mix lemon juice and garlic; stir in mayonnaise and olive oil; reserve.
Combine potato, celery and onion; fold in reserved dressing. JUST BEFORE SERVING, gently
Fold in avocado and cilantro.
