Broccoli, Nut and Seed Salad

Serves: 8-10 as side dish
List of Ingredients
bunches broccoli (chopped in a processor)
2-3 green onions (cut into pieces)
1/2 cup sunflower seeds
1/2 cup raisins
1/2 cup pine nuts
1/2 cup dried cranberries
For the dressing:
1/2 cup sugar (you can reduce this back or use your favourite instead)
1/2 -3/4 cup vegan mayonnaise like soynnaise
1/4 cup white vinegarRecipe
Chop the broccoli quite finely by hand, or use a food processor. Cut the onions into small pieces. Add the rest of the ingredients and toss.
Make the dressing - either whisking all the ingredients together, or blend with a hand mixer. Add to salad just before serving, and toss everything together.
Note from the original poster: I think apple cider vinegar or a raspberry vinegar would add a lovely flavour to this, instead of white vinegar.
And BL adds: I favour millet vinegar which comes in many varieties and can be found at most asian stores
