    Greek Style Salad

    List of Ingredients

    3 fresh tomatoes, cut into wedges
    3 small cucumbers, sliced thin
    1/2 large red onion, chopped coarsely
    1/2 cup Greek or black olives
    1 lb. tofu

    Dressing:
    1/4 cup olive oil
    2 Tbsp. lemon juice
    1 tsp. salt
    1 tsp. sweet basil, crushed
    1/2 tsp. oregano, crushed

    Recipe

    Prepare ahead and toss together just before serving. Rinse and drain tofu (a second option is to steam it for 10 minutes and let it cool). Mix ingredients for dressing, and cut tofu into 3/4 inch cubes. Pour dressing over tofu and let it marinate for at least 1 hour, stirring occasionally.
    If using black olives, add them too, for flavor. Prepare vegetables. Line platter or serving bowl wit romaine lettuce and slighty pile salad on them. Drizzle dressing over salad, along with tofu cubes.
