Marinated Vegetable Salad with Wheat Ber

2 cups cooked wheat berries
1 cup broccoli flowerets
1 cup cauliflower flowerets
1 cup carrots, diagonally cut
1 cup zucchini, diagonally cut
1/3 cup. green bell pepper, chopped
1 1/2 cups whole cherry tomatoes
2 Tbsp. onion, chopped
1 - 2-oz. can sliced black olives
1/2 cup Italian dressing
1/2 tsp. black pepper (optional)
1/2 tsp. saltRecipe
Microwave broccoli, cauliflower, and carrots covered for 2 minutes on high.
In a large bowl, mix warm vegetables, wheat berries, zucchini, green pepper, cherry tomatoes, onion, black olives, Italian dressing, salt and pepper.
Refrigerate. For the best results refrigerate overnight. Serve with parmesan cheese sprinkled over the top. Yields: 8 - 1/2 c. servings.
*To cook wheat berries: soak for 8 hours; cook for 3.
