    Mock Chicken Salad

    Source of Recipe

    Rose

    List of Ingredients

    2 c. soaked garbanzos
    1/4 c. chicken style seasoning
    1/4 c. Braggs liquid aminos
    1 T. onion powder
    1/2 t. garlic powder

    Recipe

Put garbanzos in blender. Add enough water to cover garbanzos. Add remaining ingredients. Using a rubber spatula, scrape this mixture into a mixing bowl and add approximately 2 cups gluten flour (add or subtract flour as needed to make a semi stiff dough). Work the gluten flour in until you can form it into a flattened lump that you can put on an oiled or nostick cookie sheet. Bake this in 350 F oven for about 45 min or until it is brown on the top. Remove to a cooling rack and let it set until completely cooled. Cut into pieces that you can put through a food processor on a course blade. Freeze in 2 c. portions. To make sandwiches add any mayonnaise and other ingredients like grated onion, black olives, pickles, celery....just use your imagination. Be careful with this recipe.....I have made it and added mayonnaise and it turned out too salty. I cut back on the chicken seasoning and Braggs. Also, the chicken seasoning that I use, I special order from McKays without the whey, msg, and pepper. There are other kinds of seasoning that would work I'm sure. My family calls this "Duck". I don't even remember why we dubbed it such. (rubber ducky??)
This recipe was taken from a little pamplet put out by TEACH
enterprises that can be used to teach cooking schools. It is called Nutrition Workshop Guide and the recipe is called "Chicken Salad" in it.
