    New Potato Salad

    Simple Meals: June 2005: Better Burgers," Organic Style, June

    List of Ingredients

    3 pounds fingerling or other small, thin-skinned potatoes, well scrubbed
    1 teaspoon sugar
    3 tablespoons apple cider vinegar
    1 1/2 tablespoons Dijon mustard
    3 tablespoons extra-virgin olive oil
    1 shallot, finely chopped
    1 clove garlic, minced
    1/4 cup chopped flat-leaf parsley
    1 tablespoon minced fresh dill
    Kosher salt and freshly ground pepper

    Recipe

    1. Steam potatoes until just tender, 15 to 20 minutes. Meanwhile, in a large bowl whisk together sugar, vinegar, mustard, oil, shallot, and garlic until blended; set aside.
    2. When potatoes are cooked, add to dressing and toss to coat. Add herbs and salt and pepper to taste. Serve warm, room temperature, or chilled.

    Total time: 25 minutes
    Serves 4 to 6 (makes 8 cups)
