    Wild Rice and Walnut Salad

    List of Ingredients

    1 1/2 cups wild rice
    3 oranges
    6 spring onions finely sliced
    3/4 cup walnut pieces toasted
    1 tablespoon chopped fresh flat leaf parsley

    DRESSING
    1/3 cup walnut oil
    1 tablespoon olive oil
    2 tablespoons white wine vinegar (or lemon juice)
    1 tablespoon soy sauce
    2 teaspoons honey (or vegan alternative such as maple syrup)

    Recipe

    Thoroughly rinse the wild rinse under cold running water,then put in a saucepan and fill with water to come 2.5cm above the rice. Bring to the boil and cook for 5 minutes.Remove from the heat, cover and leave for 1 hour. Drain well, transfer to a bowl and leave to cool. Peel the oranges, reserving the skin from one of them. Separate the flesh into segments and cut into small pieces. Cut the white pith off the reserved skin, cut the rind into julienne strips and reserve for garnish. Add the orange pieces to the cooled rice, with the spring onion, walnut pieces and parsley and lightly toss. For the dressing
    whisk all the ingredients together in a bowl until combined. Pour over the rice mixture and toss gently until well distributed. Garnish with the julienned orange rind.
