Recipe Introduction
(Delicious and Nutritious in 30 Minutes)
There are a number of ways to create vegetarian Sloppy Joes, including
using tofu, seitan, and meatless meats, such as Boca Crumbles, Lightlife
Gimme Lean Beef, or Lightlife Smart Ground Original. Delicious and filling!
1 yellow onion, chopped
1 green bell pepper, diced
1/3 cup water
1 15-ounce can black beans
1 15-ounce can tomato sauce
1/4 cup quick-cooking oatmeal
1 tablespoon soy sauce
1/2 tablespoon prepared mustard
1 teaspoon chili powder
6 whole wheat buns
Recipe
Place the onion and bell pepper in a saucepan with the water. Cook, stirring frequently, until the vegetables soften, about 5 minutes
2. Meanwhile, mash the beans with a bean or potato masher (do not use a food processor). Add the beans and remaining ingredients, except the buns!
3. Cook over low heat until heated through, about 5 minutes.
4. Serve on the buns with your choice of accompaniments, such as
onions, tomatoes, lettuce, pickles, mustard, and ketchup.
RECIPE HINT: Try this over toast, potatoes, or grains. Canned pinto beans also work well in this recipe.
