Citrus Bearnaise-Style Sauce

4 shallots, minced
1/3 cup dry white wine or nonalcoholic white wine
2 tsp. minced fresh thyme
1/2 tsp. dried sage
1 Tbsp. minced fresh tarragon
1/2 tsp. ground pepper
1/4 tsp. saffron threads
1/2 tsp. minced lemon zest
1/2 tsp. minced orange zest
1/4 cup fresh lemon juice
1/4 cup fresh orange juice
2 tsp. nutritional yeast
1/2 cup silken tofu blended with ½ cup soymilk
1/2 cup soymilk
Sea salt to taste
In a medium saucepan, bring the shallots, wine, and vinegar to a boil
over medium heat. Cook to reduce by half, then add the thyme, sage,
tarragon, pepper, saffron, zests, and juices. Cook to reduce by half
again. Remove from heat and stir in the remaining ingredients. Serve
warm, or store in an airtight container in the refrigerator for up to 4
days. Reheat to serve.
Makes 1 1/3 cup
