"Alfredo" Sauce

List of Ingredients
1 T. olive oil
1 yellow onion, chopped
½ c. raw cashews
½ c. silken tofu
2 cups soy milk
1/3 c. vegan Parmesan substitute
Salt and pepper to taste

Sauté onion in oil. Then blend onion and all other ingredients in blender until smooth. Reheat if necessary. Covers 1 lb,. of fettuccini.
I like to alter this recipe a little bit. I double the tofu and halve the soymilk to make it very thick and pour it over steamed vegetables. It's the tastiest substitute for cheese sauce I've found.
