    2 pounds kale or green or Savoy cabbage
    3 lbs. russet or other good mashing potatoes
    2 c. minced leeks or green onions
    3/4 c. non-dairy milk
    salt and pepper to taste

    Recipe



    Cut the potatoes into chunks and boil in water or broth to cover until tender, but not mushy.
    Meanwhile, wash and trim the kale or cabbage, discarding any tough stems. Chop it and steam it for 5-10 minutes, or until tender. Cool it and gently squeeze out the water. At the same time, in a lightly-greased skillet, stir-fry the leeks or green onions until softened, adding a splash of water or broth as need to keep it from sticking.

    Drain the potatoes well and mash with a potato masher. Beat in the nondairy milk; then the cooked kale or cabbage and leeks. Taste for salt and pepper. Serve hot.

    VARIATIONS:

    ³CHAMP² OR ³STELK² (IRELAND) OR ³CHAMPITT TATTIES² (SCOTLAND): Instead of the cabbage or kale, mix the potatoes with about 2 c. cooked, mashed petit pois (baby peas). Use the green onions instead of leeks.

    ³RUMBLEDETHUMPS² (SCOTLAND): Use green or Savoy cabbage, not kale.

    ŒTATTIES ŒN¹ NEEPS² (SCOTLAND OR ³PUNCH-NEP² (ENGLAND): Instead of the cabbage or kale, use mashed peeled boiled, steamed, or roasted turnips. Use chives instead of leeks or green onions.

    ³CLAPSHOT² (SCOTLAND): Instead of the cabbage or kale, use mashed peeled boiled, steamed or roasted rutabagas.

    NOTE: Turnips are white-fleshed, with a white a purplish skin; rutabagas are yellow fleshed,and usually larger than turnips.

    (ALSO CALLED ³STAMPOT² IN HOLLAND

    It's delicious by any name, especially when served with low-fat gravy (below) or stew, instead of the usual melted butter. You can leave the peels on the potatoes, if they are
    fairly thin-skinned and unblemished‹you won¹t really notice the mashed-up skins with the kale or cabbage mixed in.
