    Cauliflower in Curry Sauce

    1 whole head cauliflower
    1/4 cup vegan margarine
    1/4 cup flour
    1/2 to 1 teaspoon curry powder (Curry powder flavors can vary in strength, so add to taste in this recipe.)
    1 teaspoon salt, or to taste
    1/8 teaspoon pepper
    2 cups soy milk
    2 tablespoons chopped capers, optional

    Place whole trimmed cauliflower in a steaming basket in a pan with 1-inch of
    boiling water, Cover and cook for 15 to 20 minutes, or until cauliflower is
    tender.
    Melt margarine over low heat; blend in flour, curry powder, salt, and
    pepper. Add 2 cups soy milk, stirring constantly. Cook until sauce is smooth
    and thickened. Stir in chopped capers. Serve hot over whole cooked
    cauliflower.
