    3 eggplants (small)
    3 eggs
    mashed crackers (GF but not rice based - something similar to a ritz is best)

    Recipe



    1. Slice eggplants without pealing.
    2. Season with salt (brings out the bitter flavor).
    3. Wash the eggplants.
    4. Beat eggs.
    5. Bread eggplant - soak each slice in eggs wash and smear with crackers.
    6. Place the breaded eggplants in a greased baking pan.
    7. Cook in oven for 15 minutes (450º F).
