    SOUTHWESTERN ONION RINGS

    List of Ingredients




    1 large or 2 medium sweet onions, such as Vidalia
    1/2 cup soy milk
    1 cup flour
    1 teaspoon chili powder
    1/4 teaspoon cayenne pepper
    Oil for deep frying, such as canola
    Salt

    Recipe



    1. Peel onions and cut horizontally in 1/4-inch-thick slices.
    Separate the slices into rings.

    2. Pour soy milk into a bowl. Combine flour, chili powder and cayenne
    pepper in another bowl and mix well. Heat oil in a deep, heavy pot to
    360 degrees.

    Dip onion rings in soy milk and then dredge in flour mixture, shaking off
    excess. The coating with be very thin. Fry in batches in the hot oil
    for about 11/2 minutes, or until golden brown. Drain on paper towels.
    Sprinkle with salt.

    Serves 2
