Thanksgiving dishes! And of course, it can be made any time of the year.
This scrumptious bread stuffing leaves the bird out of it - or leaves
the stuffing out of the bird! - and satisfies with crunchy nuts and
flavorful herbs.
Serves 4-6
Ingredients
6 cups diced bread (I use Pugliese, but any kind of bread will do,
including sourdough. This is also the perfect time to use the day-old
bread that's been sitting on your counter.)
2 Tbsp non-hydrogenated margarine (I recommend Earth Balance - available
at Trader Joe's, Whole Foods, Rainbow Grocery, and "health food" stores.)
1 large onion, diced
4 or 5 stalks celery, sliced
2 large carrots, peeled and thinly sliced
1/2 teaspoon rosemary
1/2 teaspoon thyme
1/2 teaspoon sage
1/4 cup fresh parsley, chopped
3 Tbsp raisins (optional)
1/4 cup walnuts and pecans
1-1/2 cups vegetable stock
1/4 teaspoon salt, or to taste
1. Preheat the oven to 350 degrees. Place diced bread in a 9 x13
or 13x13 baking pan and place in oven for about 15 minutes, until the
bread is well toasted.
2. Meanwhile, warm the margarine in a saute pan and saute onion,
celery, and carrots over medium heat until onion is translucent.
3. Remove bread from oven and add onion mixture, herbs, raisins,
nuts, and salt. Mix well. Carefully drizzle the stuffing with vegetable
stock and toss gently.
4. Bake uncovered for 30-40 minutes. Season with black pepper if
desired.
