Sweet Potatoes Baked in Cider with Currants and Cinnamon
List of Ingredients
4 lb sweet potatoes
2 oz soy margarine (original recipe called for butter)
1 oz minced shallots
8 fl oz apple juice
2 oz currants
1 tsp ground cinnamon
salt as needed
pepper as neededRecipe
1. Scrub the sweet potatoes and peel them. Slice thin by hand or on a
mandolin
2. Shingle the sweet potato slices in a well buttered (soy margarined)
casserole or gratin dish. Sprinkle with the shallots, Add the cider (juice)
There should be enough to thoroughly moisten the potatoes. Add the currants,
cinnamon, salt and pepper.
3. Cover the sweet potatoes loosely with aluminum foil and bake at 325
degrees F until the potatoes are very tender about 35 - 40 min. serve
immediately.
Serves 10
Now I fixed it according to the original recipe. I would recommend the
following modifications. 1 use about 12 oz of Apple Juice, 2. Mix the
apple juice cinnamon together to allow it go get through to all of the sweet
potatoes instead of it just sitting on top.
