Almond Arugula Bisque

List of Ingredients
1 cup minced yellow onion
1 tablespoon minced garlic
1 tablespoon olive oil
1 tablespoon dry basil
1 tablespoon garam masala (preferably fresh ground)
1/4 cup white wine
6 cups baby arugula (packed tightly)
2 cups vegetable stock
4 cups almond milk
Salt to tasteRecipe
On medium high, heat oil in a 4 quart sauce or soup pan.
Add onions and garlic, heat until translucent.
Add basil and garam masala, finish caramelizing onions. Deglaze pan with white wine, add stock and arugula.
Heat arugula until wilted then remove from heat to cool.
Place contents of pan into a blender and puree slowly while adding almond milk.
Return contents to the pan, heat soup on low.
High heat will separate the soup.
Salt to taste.
