    BRYANNA'S VEGETARIAN IRISH STEW WITH GUINESS STOUT

    List of Ingredients




    2 medium onions sliced
    1/4 c. flour
    4 c. water
    1 c. Guiness Stout (or dark dealcoholized beer)
    2 c. thickly-sliced mushrooms
    1 c. sliced carrot or parsnip rounds
    1 c. large-dice peeled turnips or rutabagas
    ("swedes")
    1 c. diced celery
    1 c. reconstituted textured soy protein chunks (1 to 2)
    (TVP)
    (or, if you like a
    drier stew, just throw in 1 c. dry TVP
    chunks)
    1/2 c. red split lentils
    1/2 c. chopped fresh parsley
    1/4 c. soy sauce or mushroom soy sauce
    3 vegetarian bouillon cubes
    1 bay leaf
    2 tsp. Marmite or other yeast extract OR 4 tsp.
    red miso
    1 tsp. sugar or alternate
    1/4 tsp. dried thyme rosemary and
    marjoram
    pepper to taste
    OPTIONAL: a dash of Kitchen Bouquet or
    other gravy browner for color

    Recipe



    In a large, heavy pot, lightly-greased, over high heat saute the onion until it begins to soften, adding a few drops of water as necessary to keep from sticking. Add the flour and stir around thoroughly. Add the remaining ingredients, mix well and bring to a boil. Cover, turn down to low and simmer for about 30 minutes, or until the vegetables are done. Taste for seasoning. Serve with mashed otatoes, boiled or steamed potatoes, or colcannon (mashed potatoes with cabbage).

    Notes: This recipe, a variation of the one below, appeared in my book "The Almost No-Fat Holiday Cookbook".

    This stew is entirely my own invention and contains such un-Irish ingredients as soy sauce and red lentils. But it has the taste and texture of a good brown stew (or "gypsy", as it's called in some Irish homes), and it's delicious served with Colcannon.

    NOTE: If you don't want to use alcohol (even though most of it cooks off during the simmering), use the darkest dealcoholized beer you can find instead of the Guiness
    Stout (an Irish product that can be found in most liquor stores)

    Beth's Note: Guiness Stout is not vegan because of insinglas used in the processing but Sam Adams Cream Stout is vegan (i spoke with someone from the company last year to confirm this).

    Per serving (excluding unknown items): 43 Calories; less than one gram Fat (4% calories from fat); 1g Protein; 9g Carbohydrate; 0mg Cholesterol; 25mg Sodium
