1 1/2 cups dried black beans
4 cups water
2 tablespoons olive oil
1 onion -- finely chopped
1/2 green bell pepper -- finely chopped
2 cloves garlic -- minced
2 carrot -- finely chopped
2 celery -- finely chopped
1 teaspoon cumin
1/4 teaspoon cayenne
1 tablespoon lime juice
1/4 cup salsa
Recipe
1. Soak beans in water overnight. In a large Dutch oven, saute onion, pepper garlic, carrots and celery until almost soft.
2. In a large Dutch oven, saute onion, pepper, garlic, carrots and celery until almost soft. Add spices and saute a few minutes more. Add beans, water lime juice and salsa and simmer until beans are beginning to fall apart, 1 1/2 to 2 hours.
