Creamy Three Potato Soup

Recipe Introduction
I made this for the church potluck we had today and it went over very well.
While the original recipe called for milk I used freshly made soymilk. It also called for low sodium chicken broth and I used vegetable broth instead and it turned out great according to the church members.
List of Ingredients
2 tbs Vegetable Oil
2 med Leeks, chopped, white and light green portions only
1 med onion sliced
6 cups vegetable broth
1/2 lb Russet Potatoes peeled and sliced
1/2 lb Yukon Gold potatoes, peeled and sliced
1 lb sweet potatoes or yams peeled and sliced
1/2 cup soy milk
1/2 tsp ground white pepperRecipe
Heat oil in dutch oven over medium heat until hot. Saute leeks and onion 3-4 minutes. Add broth and potatoes; bring to a boil. Reduce heat to low; simmer, partially covered, about 30 - 40 minutes or until tender.
Remove from heat; cool slightly. Puree in blender or food processor; return to dutch oven. Stir in milk and pepper. heat gently over low heat just until hot
