* 2 English cucumbers, peeled and seeded
* 3 green onions, whites only
* 1 tsp garlic, freshly pressed
* 1 1/2 cups [vegan] nonfat plain yogurt
* 1/2 cup [vegan] sour cream
* 1/2 tsp salt
* 1/4 tsp white pepper
* 1/4 cup parsley, chopped
* 1/3 cup fresh mint
Recipe
Combine all ingredients in a food processor and purée until smooth. Chill for at least 2 hours. Garnish with a tiny sprinkle of paprika and a sprig of mint.
