Denise's Note: Mochi is traditional rice food made by pounding sticky rice and molding it into rectangles. You can usually find mochi in the refrigerated section of a good natural foods store. It is tasty food on its own. You can bake it and it puffs up.
* 1 tsp safflower oil
* 1 onion, diced
* 1 medium size butternut squash, seeded and cut into 1 inch chunks
* 1 stalk celery, diced
* 1 carrot, diced
* 4 cups water
* 1 TB hulled sesame seeds or 2 tsp sesame tahini
* 2 TB white miso
* 1 TB poppy seeds
* 2 squares mochi, cut into 1/2 inch pieces
Recipe
1. Heat oil in a soup pot and sauté onion for 5 minutes.
2. Add squash, celery, carrot, and water. Bring to a boil and reduce heat. Simmer for 30 minutes.
3. Pureé soup with the sesame seeds or tahini and return to the soup pot.
4. Remove 1/2 cup of the soup and dilute the miso. Blend in the poppy seeds and return the mixture to the soup.
5. Add mochi pieces. Simmer soup for 5 minutes and serve immediately (if the mochi dumplings cook too long, they will dissolve and thicken the soup).
