This is my favorite tomato soup recipe as I love the crunchy
vegetables...Serve with sandwiches and salad.....Oh yum!
List of Ingredients
3 ribs of celery diced small
1 onion diced
1/2 sweet red pepper diced
2 quarts canned tomatoes
1/3 c. sucanat
2T. sweet basil
2 bay leaves
1/3 c. cashews blended with 2 c. waterRecipe
Sautee onions, sweet red pepper, and celery in oil or water until crisp/tender.
Meanwhile bring tomatoes to a boil for several minutes. Add sautéed mixture. Add basil, and bay leaves...add Sucanat. Add cashew "milk". Do not boil again. Mixture may appear to curdle for a few minutes but will be OK if you stir it well. If you want it thicker add a can of tomato paste.
Also, add salt if your home canned tomatoes don't have enough.
