    Tuscan Tomato bread soup - Pappa col pomodoro

    List of Ingredients




    10 ripe tomatoes
    olive oil
    3 garlic cloves
    1/4 to 1/2 loaf old dry country bread
    2 1/4 pints/6 cups/1.5L stock (instant or real) lots of basil

    Recipe



    Place the crushed garlic cloves in the olive oil and heat. When they are brown remove them and add the peeled tomatoes. Cook for 1/2 an hour. Heat the stock and add the tomato sauce, the bread and half the basil and cook until it reduces almost completely. Stir often so that the bread breaks up completely. Can be served either hot or cold. When you serve pour a little
    olive oil on top and the remaining fresh basil leaves.
