    Stuffed Tofu Turkey

    TOFU SHELL:
    1 1/2 pounds tofu
    2 tablespoon arrowroot powder
    3 teaspoons salt-free vegetable soup powder
    3/4 teaspoon salt
    1/4 teaspoon pepper
    1 1/2 teaspoons agar flakes -- OR
    1 teaspoon agar powder
    STUFFING:
    2 cups brown rice -- cooked
    1 cup wild rice -- cooked
    1 cup onion -- finely chopped
    1 cup celery -- finely chopped
    1 cup carrots -- finely chopped
    4 cloves garlic -- minced
    SEASONINGS:
    1 teaspoon ground sage
    1/2 teaspoon dried basil
    3 teaspoons salt-free powdered vegetable soup base
    1 teaspoon salt
    1/4 teaspoon pepper
    GLAZE:
    2 tablespoons soy sauce
    1 tablespoon orange juice concentrate

    Recipe

    Stuffing: Saute' altogether 1 cup each finely chopped onion, celery, carrots, and 4 cloves minced garlic. Mix rice and vegetables together with seasonings.

    Tofu Shell: Blend ingredients for tofu shell until smooth.

    Line a square pan or a quiche pan with wax paper, then grease the wax paper. Smooth all but 1 cup of the tofu mixture into the pan bottom and sides to make the shell. Gently and firmly press the stuffing into the soft shell. Avoid displacing the tofu.

    Smooth the remaining cup of tofu mixture over top, and seal edges. Cover, making sure that the lid doesn't touch the tofu. Bake 350 degrees fahrenheit for 30 to 40 minutes. Let cool 10 minutes.

    Unmold carefully and peel the paper off.

    Glaze with soya sauce and juice concentrate mixture, and bake again for 5 more minutes. This makes it golden brown!
